You’ll need:
2 large, ripe tomatoes
1 clove garlic, peeled and halved
Juice of 1 leomon
1 small cucumber,sliced
1 small red onion, peeled and thinly sliced
1/2 cup small black olives
1 head of lettuce, like butterhead, tear into pieces
4 hard-cooked eggs
6 tablespoons extra-virgin olive
2 handfuls chopped fresh basil
freshly ground black pepper
4 small new potatoes lightly steamed
200 gms fresh seared tuna, or 180g tin of tuna
Cool the eggs until cold, then chop into quarters
Cool the potatoes until cold then quarter also
Place the lettuce roughly torn in a flat salad bowel, and add the rest of the ingredients on top. Add the tuna. And garnish with the basil. Drizzle with the olive oil and lemon juice.
